Yesterday Keri and I had our usual CSA Farm share pick up and got a couple Celeriac root to try out. Celeriac is a variety of Celery with an edible root as well as the stalk. I think it tastes a bit sweeter than regular celery. So with that and a bunch of ingredients I threw together a huge pot of soup to ward off the Autumn chill. The recipe is below.
Recipe: Vegetable Soup with Celeriac
Ingredients
- 2 cloves garlic minced
- 1 medium onion diced
- 1 carrot sliced
- 5 medium potatoes cubed
- 1 Celeriac root shredded
- Celeriac stalks chopped
- 2 small hot peppers seeded and minced
- 1 handful of green beans snapped
- Paprika to taste
- Salt to taste
- large pinch of Fine Herbs and Oregano
- 1 quart of vegetable stock
- 1 quart of water
Instructions
- Combine all ingredients into large soup pot and bring to boil. Let cook for 1 hour and add more water if needed.
- Top with some grated Peccorino cheese.

I’m going to try this one, nephew! Sounds so good!! Liz and I are trying out a vegetarian diet for ourselves! Any great ideas, I’m totally game! Don’t know where we would find that celeriac root.. hmmmmm…
Farmer’s market should have Celeriac. Whole Foods too. If you can’t find it just use regular celery. It tastes much the same.
