lentil_quinoa_salad

Ingredients

  1. 1 cup quinoa, rinsed
  2. 2 cups water
  3. 1 cup lentils
  4. 1/2 cup chopped parsley
  5. 3 green onions chopped
  6. 3 tablespoons olive oil
  7. 2 tablespoons lemon juice
  8. Salt
  9. Pepper
  10. Feta Cheese crumbles
  11. Hot sauce

Instructions

  1. Boil lentils in pot of water until tender. About 20 minutes.
  2. While the lentils cook, rinse quinoa in a strainer. Add this and the 2 cups of water to a second pot. Cover and simmer on low heat until water has evaporated. About 20 minutes.
  3. When the lentils are done strain them and rinse until cold water until they are cool.
  4. In a large mixing bowl add the oil, lemon juice, green onions, parsley, and cool lentils. Add salt and pepper to taste.
  5. Once the quinoa is done allow that to cool and add to the rest. Mix well.
  6. Serve with feta crumbles and hot sauce.
